Winemaking
Grapes were hand-picked on the 1st and 8th February 2023. The grapes arrived in Johannesburg 24 hours later via a cold truck (5 degrees celsius). After 24 hours skin contact they were pressed using our 700L basket press, settled for 2 days and then put on to 3 barrels. Approximately 15% whole bunches were used.
Spontaneous fermentation began immediately, alcoholic fermentation took 15 days to complete and by mid-April secondary (malo-lactic) was complete too. The wine was aged in barrel for 10 months, then racked and bottled in January.
Tasting Notes
An elegant, lightly oaked wine full of apricots and peaches on the nose, as these as well as pineapple and quince on the palate. Opens up to a lingering rich pineapple mid-palate. Winemaking methodology has created beautiful width and structure to the palate such that Elli Chenin is a ‘food wine’. Delicious with chicken, particularly those with a fresh creamy sauce. Ages well, up to 5 years.
Vineyard
These grapes are from two blocks on ‘Jakkalsfontein’’ farm, in the Swartland. They are on gentle slopes with slight north and northeast facing aspects respectively, and are bush vines planted in 1986 and 2007.
80% of Elli is from the 1986 block so at picking the vineyard was 38 years old. Dry land farming is employed (no irrigation). Soils are ‘Koffieklip’ with low to medium potential and reasonable water holding capacity. Yield is approximately 7 tons/Ha.
